Slow Cooker Sausage and Peppers

Some time after my son was born, I learned that it was much more efficient to prepare two meals at one time. So whenever possible (if the recipe will freeze well), I bag and freeze an extra dinner while prepping. It only adds a few minutes to the prepping process, and it keeps me constantly stocked with freezer meals for those days that I don’t have time to prepare dinner (or when I just don’t feel like it!).

This recipe is great for that! It’s inexpensive, preps fast, and freezes well. And it’s seriously yummy!

Write on a gallon-sized freezer bag: “Sausage & Peppers – Thaw. Cook on low 6-8 hours. Serve over red beans and rice.”

Chop 1 package of smoked sausage and place it in the bag. Chop a 2ndpackage and place it in a slow cooker.

Split one 10 oz. bag of frozen diced onions between the slow cooker and the freezer bag.

Chop about ½ cup (4) green onions for the slow cooker and another ½ cup for the bag.

Chop 1 green pepper and 1 orange (or yellow or red) pepper and add to the slow cooker. Chop a second green pepper and orange pepper and add to the freezer bag.

Add 1 can diced tomatoes and their juice to the slow cooker and a second can to the bag.

Add 2 cloves minced garlic and 1 tbsp Italian seasoning to the slow cooker Add the same to the bag.

And done! One ready-to-cook meal and one ready-to-freeze meal in 10 minutes!

Cook on low for 6-8 hours. Serve over red beans and rice.
